One ripe banana

⅛ tsp cinnamon

In two clean bowls, break the eggs and separate the egg whites from the egg yolks. It’s essential that no yolk gets into the egg whites.

Beat the egg whites for 2 minutes until they structure soft peaks. (Soft peaks are characterised as hardly holding their shape. The peaks flop over promptly when the beaters are lifted).

Add egg yolks, with the banana, cinnamon, baking powder and protein powder, into a big bowl and beat until it is smooth.
